A message from our big dreamer, planner, project
manager, construction worker, interior designer,
Francophile and chief bottle washer, Kevin Tighe!
Drum roll please...ta-dah! One day short of 44 months of toil, we are at long last legally permitted to open as a restaurant!
Here's the plan: This week (starting May 17, 2021) we'll begin interviewing and hiring kitchen staff. Once we have enough on board we'll open for take-out only until the kitchen staff is fully familiarized with the menu. Each day we'll offer one French meal and one American meal. The next day we'll move down the menu and offer a different French meal and a different American meal, and so on down the menu. The hope is once the kitchen staff cycles through the entire menu we'll bring in a wait staff and begin full service sit-down dining.
That's the plan as of today but anyone that's watching what's been going on in the restaurant business recently realizes being flexible seems to be the key to survival.
